WINE ELABORATION:
Manual harvesting of grapes takes place in the early morning. We make use of younger Pinotage bushvine vineyards specifically for this purpose. After destemming the juice spend four hours on the skins to extract a light pink colour. The juice is then racked and cold settled over night before racking and yeast inoculation takes place. Fermentation is maintained at a controlled temperature (14-16 °C) in stainless steel tank. After fermentation the wine is filled completely and left on the fermentation lees for approximately two months to enhance complexity. During this period we make use of lees stirring techniques to enhance further dimension and depth and also stabilize the colour. This all is done before stabilization and fining prior to bottling.

TASTING NOTES: The wine has ripe peach and apricot aromas, with attractive raspberry and tropical fruit. The mouthfeel shows good fruit structure with good length and a balanced finish.
