WINE ELABORATION: Manual harvesting of grapes takes place early in the morning. The mash then undergo a cold-soaking maceration period where we usually inoculate on day 2 to maintain microbial stability while we naturally heat up the mash to anything between 24-28°C. We use different vineyards from the premises with different yeast strains to produce multi dimensional components. During fermentation we will make use of manual punch-downs as well as mechanical pump-overs/rack & return methods. A portion of the wine is taken from the skins at 3°B to finish fermentation which deliver the upfront fruit and secondary aromas from cooler fermentation techniques. We also let a portion of the Shiraz ferment dry on the skins where we make use of an extended maceration technique on the skins. This component usually give us the more serious backbone with good extract and primary Shiraz characteristics. The wine will then be racked to a combination of French and American(1st and 2nd fill) oak barrels where Malolactic fermentation takes place. It undergoes a maturation period of 12 – 16 months depending on the different components. A final barrel selection will then be done before putting the final blend together. The wine spend 12 months in bottle before it is released.
