This wine tempts with enticing aromas of strawberries which leads to lingering flavours of cherries, olives and spice.
The vineyards lie in deep red soils ensuring excellent water-retention which adds structure and fullness to the wine.
Harvesting occurred when the grapes were between 22 – 23° Balling and picking was done in the early morning hours to ensure the grapes arrived cool at the cellar. Sulphur was added prior to transport to protect the grapes from oxidation. Cold soaking was done for 12 hours
before inoculation. Fermentation lasted between 6 and 8 days at between 22 – 25°C. The wine underwent malolactic fermentation in stainless steel tanks.
The 2016 harvest was significantly smaller than the past three vintages. The harvest was a challenge for both viticulturists and winemakers as it was one of the driest growing seasons. Winemakers were faced with lower sugar and acid levels which called for innovative winemaking
techniques to produce high quality wine. The smaller crop did however result in the formation of smaller berries with a higher concentration of flavours. Overall the wines are showing exceptionally good structure with a fresh and crisp finish.
A perfect partner to food especially warm fennel and pomegranate salad or Springbok loin.
