Olive Brook Crafter’s Choice Sémillon 2015 Tasting note: Brilliant hue with an arresting nose, waxy and rich, with a lemon rind character enhanced by some nuttiness and a softening sheen of mellow oak. Bright fruit on the palate with a great core of concentrated creaminess adding succulence and vitality, underscored by some subtle lemony acidity. A wine with great intensity and concentration, lanolin smoothness and a refined, long finish. Recommended food: Enjoy with all cocktail bites, seafood, poultry, light beef roasts, pasta, terrine and cheese dishes. Serving temperature: 10-15º C. Serve cool rather than chilled, allow for breathing, preferably decant. Maturation: The sémillon has been matured in French oak for 18 months with 80% of the wine also fermented in barrels. Keeping the wine at optimum storage conditions (below 20º C), the tertiary flavours will fully emerge with further bottle ageing to eventually morph into a complex multi-layered wine.
