Vinification:
Harvested according to taste and optimum ripeness from a variety of premium vineyards. Early morning harvest. Cold soaked for 24 hours. 80% free run juice. 20% soft pressed according to taste. Alcoholic fermentation (VIN 7) in stainless steel tanks under regulated cooling for approximately 2 weeks. Blended to taste to capture the essence of the Klein Roosboom terroir.
Description:
