The wine is bright ruby-red in colour. Aromas of fresh, ripe cherries with an undertone of well-used leather greet you on the nose. On the pallet the wine has a silken texture and gamey complexity.
This is the most reliable red wine to serve with fish not just tuna and salmon, but also the less-meaty fish types. Pinot Noir loves chicken in every way from roasted to Southern fried, casseroled and even microwaved. It also likes duck, especially when smothered in fruity sauces.
Lamb is not Pinot Noir’s first choice but it has a special affinity for game, which echoes its own gaminess.
