Fish Hoek is a little settlement just outside of Cape Town on the False Bay coast. It is blessed with a breath taking beach, where the waves break for the first time in their previously unhindered journey from the Antarctic. Backed by Table Mountain, the locals enjoy the outdoors as a way of life - it is this spirit that we hope to capture in this wine. The grapes are mostly from the vineyards of Robertson, Swartland and Perdeberg (near Paarl). Warmer climates in these areas produce a more tropical, fruity style of Sauvignon Blanc. The grapes were harvested from different regions around the Western Cape at an average of 25°B, de-stemmed and crushed to stainless steel fermenters where it had 2 days of skin contact before it was fermented. Fermentation took place between 25-27 °C on the skins till dry with soft pump-overs every 4 hours. After alcoholic and malolactic fermentation a combination of American and French oak staves were used to give this wine its unique characteristics. Bouquet: This warm rich ruby red wine shows great complexity on the nose. Palate: There is a mixture of dark red fruit, cigar box and mint aroma’s with wood well balanced. Sweet spicy undertones give this wine great depth.

Food Pairing: Ostrich fillet in red wine reduction sauce on a wild mushroom risotto.
