The different building blocks were viniﬁed separately and the ﬁnal blend was ﬁnished after the wine had some time on the gross lees. Using only free-run juice, the wines were fermented in stainless steel tanks at very low temperatures. Extended lees contact of months were allowed after fermentation to create better mouth feel.
The wine is then blended and bottled.
