Cabernet Sauvignon () Barrel fermented/barrel matured/wooded (staves, chips or wood rice) 2020 and older
The grapes are hand harvested in the morning at 23°B. This block yields about 8TON/HA and the vines are 17 years old. Fermentation takes place in stainless steel tanks for 10 days, followed by 3 days of cold maceration, followed by a punch over for a further 6 days.
Bag pressing take place and then the wines are moved into the barrels via gravity feed mechanisms. The wine ages in French Oak Barrels, 15% New wood, 30% third fill and 55% fourth fill, for 18 months.
After bottling the wines are rested for 6 months before release. The wines are very fruit driven in the first year, but develop into complex layered wines over time.
