Windfall’s Sauvignon Blanc hosts an array of mouthwatering tastes.
Bracing acidity, lime and earthy int notes followed by tropical fruit
flavours and finished with a very delicate white oak taste.
A true sensation for the nose and palate which does not disappoint.
The grapes are hand-picked early in the morning at a balling of 23 ̊.
The early morning gentle picking ensures the freshest flavour for
the wine.
Fermentation takes place for eight hours at 13 ̊C on the skins,
followed by a gentle bag press. Three days sedimentation, and then a
further fermentation for 14 days at 17 ̊C, 20% of the wine
fermentation takes place in first and second fill French barrels to
add some body and further maturation takes place for 100 days on
the lees.
The wines are tested for 60 days after bottling which allows for
settling, resulting in one of our most favoured wines.
Best enjoyed with sushi, chicken or sh dishes, salads and creamy
pasta dishes.
