The wine spent 8 months in on its primary lees in barrel before the components were blended.
It is a thought-provoking wine that is best enjoyed on its own and with good company. It is a perfect aperitif wine but not an easy match for food as it likes to be treated with respect and true love to bring out the layered elegance and beauty. It is a sophisticated wine that likes simplistic, raw, fresh produce. It loves to be teased with a starter of fresh tomato and goat’s cheese or a very simple panzanella salad and would also do well with a warm lemon and thyme chicken dish served with steamed vegetables like parsnips, fennel, or asparagus.
