The Pinotage grapes are grown in fruitful sandy limestone soil with excellent
water retension capacity. The Pinotage vines are 15 - 18 years old and consistently
produces grapes of the highest quality. The fruit is delivered to the cellar once
optimum flavour and tannin levels are reached. Crop levels vary between 4-5 tons
to the hectare. All unwanted berries are excluded on the sorting table. The fruit is
gently crushed to small open fermenters to allow cold soaking for 3 days. Inoculation
with selected yeast cultures follow with fermentation lasting between 7-14 days
@ 24-26ºC. The cap is gently punched down 3 times a day allowing maximum colour
and flavour extraction. The wine undergoes malolatic fermantation in new French oak
and allowed to mature. This exceptional wine is produced in small quantities according
to a special winemaking method, which deliveres a splendid wine bursting with flavour
