Merlot

Description: This wine showcases a burgundy red colour. The nose offers gorgeous ripe berry fruit aromas, complemented by nuances of dark chocolate, tabaco and subtle spice, These flavours carry through to a medium bodied palate, where it is further complimented by flavours of mulberry, violets and some savoury nuances. The tannins are soft and beautifully integrated, balanced by delicious freshness on the finish Production: Grown in the cool climate Constantia Valley, the grapes for this wine are all grown on Eagles’ Nest, against steep mountain slopes, ranging from 100m to 400m altitude. All grapes were handpicked and hand-sorted, and then crushed into various small to medium sized open top fermenters. Pump-over’s were performed three to four times per day. Following fermentation the wine was racked to a combination of 1st, 2nd and 3rd fill 225 French oak barrels, where it was aged for 18 months. After barrel maturation, select components were racked to tank and blended for a layered and complex wine
