Description:
This wine showcases a bright red colour. On the nose delicious dark fruit aromas are complimented by savoury, smoky notes. These flavours lead to a medium-full pallet, where a spiciness and flavours of red cherries and violets compliments the darker fruit. The tannins are soft and beautifully integrated, balanced by delicious freshness on the finish.
Production:
Grown in the cool climate Constantia Valley, the grapes for this wine are all grown on Eagles’ Nest, against steep mountain slopes, ranging from 100m to 400m altitude. All grapes were handpicked and hand-sorted, and then crushed into various small to medium sized open top fermenters. Pump-overs were performed three to four times per day. Following fermentation, the wine was racked to a combination of 1st, 2nd and 3rd fill 225 French oak barrels, where it was aged for 18 months. After barrel maturation, select components were racked to tank and blended for a layered and complex wine
