The grapes were handpicked in the early morning when it is still cool.
After the grapes were de-stemmed, the berries were sorted to ensure that
only the best fruit is used for this wine. Cold maceration of the skins was
given for 48 hours to ensure that maximum color and flavour is extracted.
Fermentation was done in stainless steel tanks with regular pump overs
for five days. The wine was then aged in 500-litre second- and third-fill
French oak barrels for 12 months.
