The Merlot grapes for this wine are grown in 4 different vineyards and actually in 3 different appellations as well. We hand pick everything and try to bring it to the cellar as cold as possible. We hand sort everything after destemming but before crushing. A very slow and detailed process, but a very important one. Some parts are fermented in small open top fermentation tanks with manual punch downs used for extractions. Like every batch at Laibach, each one treated according to the vintage and no fixed recipe is used. The wine spends 12 months in small French oak barrels before it is sterile bottled.
Lovely deep dark colour. On the nose some lovely sour cherry and wild “fynbos” aromas. The palate is juicy with lots of fruit and little bit of wood flavour. A well balanced wine with velvety almost silky tannin, with a good long finish. Perfect to enjoy now but with enough structure and complexity to last 3 – 5 years from vintage.
